Braised Peas with Cos Lettuce and Mint

Serves: 4 – 6

This classic French dish is from Karen Martini and swaps out iceberg lettuce for cos.

It makes the lettuce a bit more a feature and the result is just awesome.

It is rich and warm and a wonderful accompaniment: roast chicken or lamb or some chargrilled steaks we served with a herb butter and a onion rings.

It just shows how well peas and lettuce and work.

If you can make the effort, make the effort. It will dial up any meal into a memorable one.

Ingredients

80gm unsalted butter
1 large garlic clove< sliced
2 ½ cups frozen peas
2 baby cos lettuces, trimmed and cut into 1cm pieces
5 sprigs mint, leaves torn
1 tbsp sea salt (or to taste)
2 tbsp castor sugar

Method

  1. Melt half the butter in a very large frying pan over and medium heat and cook the garlic for 2 minutes. Add the peas, lettuce and ¼ cup hot water, simmer and stir for 5 minutes.
  2. Add the mint, salt, sugar and remaining butter and simmer until the vegetables are tender and the sauce is glossy and syrupy.

Karen Martini’s Spiced Lamb Meatballs in Tomato Sauce with Eggs and Coriander

I am yet to do a Karen Martini recipe that hasn’t been a keeper and this is no exception.

What a Sunday night treat, served with this clever Adam Liaw salad.

The spicy lamb meatballs are divine, what with the richness of the egg and the sweetness of the tomato sauce. And it all presents beautifully.

Sadly, so well that you will struggle to make a lunch out of it the next day. This really is a dish that is hard to stop eating.

Both of the boys loved them with Oliver describing them as ‘better than better’. Little did he know he was eating chilli, sumac and coriander.

A winner on all fronts.

Ingredients

1 tsp chilli flakes
1 tsp ground ginger
1 tsp cinnamon
1 tsp ground cumin
½ bunch parsley, finely chopped
½ bunch coriander, finely chopped
2 tsp salt
½ onion, finely diced and cooked with a little oil until soft
500gm lamb mince
½ cup fresh breadcrumbs
7 eggs
½ bunch parsley, leaves picked
½ bunch coriander, leaves picked
2 tbsp sumac
8 tbsp tomato passata
1 lemon, juiced

Method

  1. Preheat the oven to 180c.
  2. Place spices, chopped parsley and coriander, salt, onion, lamb, 1 egh and breadcrumbs in a large bowl and combine well with your hands.
  3. Roll lamb mixture into 8 oval football shapes, coat in parsley and coriander and place on a baking tray lined with baking paper. Sprinkle with sumac and bake for 15 minutes; remove from the oven.
  4. Spoon passata into an ovenproof dish, place meatballs on top, crack 6 eggs over the top and bake for 12 minutes or until the eggs are cooked to your liking. Squeeze over the lemon juice and serve.

Tagliatelle with shaved parsnip, pancetta and sage

Serves: 4

This neat little pasta is one I found it in Karen Martini’s Cooking at Home. I think she is a really good home cook and everything I have cooked of hers has been a success.

I used fresh pasta and substituted the spicy pancetta (the recipe asked for) for the pancetta I could find at the supermarket.

Tuesday night sorted!

Ingredients

300gm tagliatelle (or fettuccini)
1 parsnip, peeled
3 tbsp extra virgin olive oil
8 – 12 slices of (spicy) pancetta (I cut the pancetta into large pieces, though that is not the recipe)
2 garlic cloves, finely sliced
2 handfuls of sage leaves
1 teaspoon of dried chilli flakes
100ml white wine
150ml pouring cream
50hm shaved parmesan
1 tbsp lemon juice
Sea salt and freshly ground black pepper

Method

  1. Cook the pasta, drain and set-aside; add a little olive oil and keep warm, ensuring it does not stick together.
  2. Use a vegetable peeler to cut the parsnips into fine shavings (discarding the fibrous centre).
  3. Heat half the oil in a heavy fry-pan over a medium-to-high heat, and cook the pancetta until browned and crispy.
  4. Add the garlic, sage, chilli and parsnip and remaining oil (if necessary) and cook until the parsnip is crisp.
  5. Pour in the wine and cook for 2 minutes and then add the cream.
  6. Add the pasta and toss.
  7. Add the parmesan and lemon juice, season and serve.
