Yotam Ottolenghi’s One-Pan Crispy Spaghetti and Chicken

Serves: 4

You have to give it to this guy. He is so clever.

And this dish is just that. Like, screw you clever. Like, why didn’t I bloody think of that clever.

Like one-pot-pasta clever, though cleverer than the first batch of one-pot-pastas we were all inundated with five years back.

It’s the simplicity. The rusticity. And the various textures of the spaghetti, from soft to crunchy: the caramelised chicken.

Look at that spaghetti!

And it is fun to dish and eat.

Screw you clever.

It is a weeknight meal though served on a Saturday night with friends, it would absolutely not look out of place.

It is just that fun… and good.

Ingredients

2 tbsp olive oil
1kg skin-on chicken thighs (4-6)
Sea salt and freshly cracked black pepper
1 large yellow onion, cut into 1cm dice
3 tbsp tomato paste
3 garlic cloves, finely chopped
2 tbsp fresh thyme leaves
2 c boiling water
230gm spaghetti, broken into thirds
1/3 c lightly packed finely grated Parmesan
3 tbsp fresh breadcrumbs
1/2 c finely chopped fresh parsley
1 1/2 tsp freshly grated lemon zest

Method

  1. Heat the oven to 220c.
  2. Add 1 tbsp oil to a large, ovenproof lidded skillet and heat over high. Season the chicken with 3/4 tsp salt and 1/2 tsp pepper, then add to the hot oil, skin down. Cook for 7 minutes, without turning, to brown well.
  3. Turn down to medium-high, stir in the onion and turn over the chicken; cook for 5 minutes until the onion has softened and is slightly browned. Add the tomato paste, garlic and 1 tbsp thyme and cook, stirring the paste into the onions for 2 minutes or until fragrant and all browned.
  4. Add the boiling water, 1/2 tsp salt and 1/4 tsp pepper, then add the spaghetti, stirring to submerge and evenly distribute. Lift the chicken pieces so that sit on top of the spaghetti, skin side up. Bring to a simmer, cover with a lid and transfer to the oven for 30 minutes.
  5. In a small bowl, mix together the Parmesan, breadcrumbs, parsley, lemon zest and remaining thyme.
  6. After the pasta has baked for 30 minutes, remove from the oven and turn the oven to its highest setting and get the grill on. Sprinkle the Parmesan mixture evenly over the chicken, drizzle with the remaining oil and grill for a few minutes until nicely browned and crisp. Set aside for a few minutes and serve straight from the pan.

Kay Chun’s Coconut-Miso Salmon Curry

Serves: 4

This curry I found on NYT’s Cooking had 7k+ 5-star reviews so… it had to be done.

Add one more 5-star.

What a mild, moorish dinner.

The caremalised miso with the coconut milk, the lime and then the fresh herbs. Wow.

I used a premium coconut milk and the difference was obvious. Don’t cut this corner.

And it’s so simple. Monday-night home date-night sort of stuff.

You could add fresh chilli at the end, though whatever you do, get that lime juice in and a solid handful of those herbs.

Note: I used two cups of water and not three and I would do it again.

Ingredients

2 tbsp canola oil
1 medium red onion, halved and sliced 5cm thick
1 10cm piece fresh ginger, minced
3 garlic cloves, thinly sliced
Sea salt and freshly cracked black pepper
1/2 c white miso
1/2 c coconut milk
750g salmon, cut into large pieces
5c baby spinach
1 tbsp fresh lime juice, plus lime wedges for serving
Steamed jasmine rice for serving
1/4 c chopped fresh basil
1/4 c chopped fresh coriander

Method

  1. In a large pot, heat the oil over a medium heat. Add the onion, ginger and garlic and season. Cook, stirring occasionally, until softened. Add the miso and cook, stirring frequently, until the miso is lightly caramelised: about 2 minutes.
  2. Add the coconut and 3 cups of boiling water and bring to a boil. Cook for 5 minutes until the liquid is reduced slightly. Lower the heat and add the salmon and simmer gently until just cooked through. Turn off the hear and stir in the spinach and lime juice until the spinach is wilted.
  3. Serve with rice, topped with the fresh herbs and lime wedges for squeezing.

Blender Bearnaise

Serves: 10

Last weekend, I cooked a tomahawk over charcoal and it was tremendous.

350c, 6 minutes over direct heat and then 10 minutes over indirect heat. Rested for 25 mins.

Perfect, medium rare. As one person put it online when looking up the cooking technique and target internal temperature: you could cut it with your tongue and indeed, you almost could.

The king of the cuts?
Indirect heat before the grill was on.
Started with lobsters because why not?
My goodness.
Perfect.

Nat wanted a bearnaise at the side: which I agreed with on one hand, though what a pain. Double broiling, frantically whisking eggs, fearful of the sauce splitting.

At the same time of course, when I am walking the tight rope of cooking a tomahawk.

For years my mother has said to use the blender method, though I had only ever done so for hollandaise.

The time had come. (And to cut a long story short, I’m never going back.)

FTW.

Ingredients

1/4 c white wine vinegar
1/4 c white wine
2 tbsp shallots, minced
3 tbsp fresh tarragon, chopped and divided
1 1/4 tsp salt, divided
1/4 tsp freshly ground pepper
3 large egg yolks
1 c unsalted butter, melted

Method

  1. Combine the vinegar, wine, shallots, 1 tbsp of the tarragon, 1/4 tsp salt and the pepper in a small saucepan. Bring to a boil and simmer over medium heat for 5 minutes until the mixture is reduced to a few tbsp. Cool slightly.
  2. Transfer the cooled mixture, along with the egg yolks and 1 tsp salt into a blender. Blend for 30 seconds.
  3. With the blender running, slowly pour hot butter through opening in the lid. Add remaining 2 tbsp tarragon and blend for a second.

Classic Shepherd’s Pie

Serves: 6

So here is an interesting thing: Cottage Pie’s use ground beef. Shepherd’s Pie’s use ground lamb.

Though for purposes of calories, we went with beef here.

And wow, it is a great pie.

Just a classic, go-to recipe for a Shepherd’s Pie. (Or Cottage Pie)

Or whatever it is.

Ingredients

Meat Filling

2 tbsp olive oil
1 c chopped yellow onion
500gm lean ground beef
2 tsp dried parsley leaves
1 tsp dried rosemary
1 tsp dried thyme
1/2 tsp salt
1/2 tsp ground black pepper
1 tbsp Worcestershire sauce
2 garlic cloves, crushed
2 tbsp all purpose flour
2 tbsp tomato paste
1 c beef stock
1 c frozen mixed peas and carrots
1/2 c frozen corn kernels

Potato Topping

1kg potatoes, peeled and chopped
8 tbsp unsalted butter (1 stick)
1/2 c thickened cream
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp ground black pepper
1/4 c Parmesan cheese

Instructions

Make the Meat Filling

  1. Add the oil to a large skillet and place it over a medium heat; add the onions, stirring occasionally until softened. Add the ground beef (or ground lamb) until it breaks apart.
  2. Add parsley, rosemary, thyme, Salt and pepper and stir well. Cook for 8 mins until the meat is browned.
  3. Add Worcestershire sauce and garlic, stir and cook for 1 min.
  4. Add the flour and the tomato paste, stir until there are no clumps of tomato paste.
  5. Add broth, frozen peas, carrots, frozen corn and bring to a boil then reduce to simmer, stirring occasionally until its thicker in texture.
  6. Set mixture aside and preheat oven to 200c.
  7. Potato topping: boil the potatoes until tender.
  8. Drain and mash or put through a ricer and let the liquid evaporate for about 1 minute.
  9. Add butter, cream, garlic powder, salt and pepper. Stir all ingredients together.
  10. Add Parmesan cheese and stir well.
  11. Assemble: pour the meat mixture in a baking dish and spread out evenly to form a layer. Spoon mash potatoes on top of meat in an even layer.
  12. Bake for 25-30 minutes.

Crispy Smashed Potatoes with Caper Gemolata

Serves: 6

Anything that successfully dials up potatoes is a win for me.

Indeed, in our always-dieting house, we need an excuse to be pairing potatoes and this recipe is one such excuse.

It’s luxurious, it’s bursting with flavour from all the vinegar capers, anchovies and herbs.

And it looks wonderful plated.

You can see the effort and the effort is worth it.

Ingredients

1.5kg potatoes
Salt
4 tbsp olive oil plus more for the pan
1/4 c sherry vinegar
3 tbsp capers, drained and chopped
1 tbsp anchovy paste
1 clove garlic, crushed
1/4 c flat leaf parsley, finely chopped

Method

  1. Boil the potatoes until tender and drain.
  2. Heat the oven to 240c and arrange the shelves high. Oil a baking sheet on a baking pan and place each potato down, gently pressing until crushed though still intact. Brush the tops of the potato with 1 tbsp and roast for 25 minutes.
  3. Brush the potatoes with 1 tbsp more oil and then grill until golden brown: 4 – 7 minutes. Sprinkle with salt.
  4. While the potatoes cook, combine in a bowl the vinegar, capers, anchovy paste, garlic and remaining 2 tbsp oil and 1/2 tsp salt: drizzle over the potatoes and serve immediately.

Croque Monsieur

Serves: 4

The Croque Monsieur is is just one of the most classic sandwiches.

Though I had never had it with a glass of wine and a green leaf salad.

Turns out I’ve been doing wrong all these years.

Sitting in the sun with a wonderful Riesling, Nat and I toasted that this is what life was all about. A brilliant sandwich with the bubbling, golden gruyere, the ham, the sourdough and the bechamel.

One of the best Australian Rieslings.

I have a feeling we will pull this combination out many more times.

Ingredients

8 slices of day-old sourdough bread
3 cups loosely packed (300gm) grated gruyere
8 slices of smoked ham

For the Bechamel Sauce

3 tbsp butter
4 tbsp plain flour
3 c milk
Freshly grated nutmeg
Sea salt and freshly ground pepper

Serve with a simple salad of greens: cos, radicchio, watercress and rocket and just some extra virgin olive oil and red wine vinegar, well seasoned.

Method

  1. Start with the Bechamel: melt the butter in a small saucepan over a low heat. Add the flour and cook, stirring constantly for 2 minutes. Slowly add the milk, whisking constantly until it starts to boil and finally thickens. Take off the heat, season and a pinch or two of nutmeg. Cool sufficiently that it is firm enough to spread.
  2. Meanwhile, heat the oven to 200c. Place the 8 sourdough slices on a chopping board. Layer the Bechamel on each slice, spreading evenly edge-to-edge. Sprinkle the cheese equally over each, edge-to-edge.
  3. On 4 of the slices, layer 2 slices of ham and then place the remaining 4 slices on top, cheese-side up. Transfer to a baking tray and cook for 12 minutes or until golden: use the grill at the end if necessary.
Ham sandwiched between the two layers.
Voila.

Neil Perry’s Vietnamese Chicken and Prawn Coleslaw

Serves: 4

This is such a classic Vietnamese dish.

Pops of flavour, could be had as a main or a side.

Very hard to get it wrong. Very hard to complain.

Ingredients

1 small roasted or barbecued chicken
6 cooked large prawns, peeled and deveined
1 carrot, julienned
200gm shredded cabbage
1 small red onion, cut into thin rings
40g mint and coriander
1 1/2 tbsp crispy fried shallots, plus 2 tsp to serve
1 1/2 tbsp crushed roasted peanuts, plus 2 tsp to serve

Nuoc Cham Dressing

2 long fresh red chillies, finely chopped
1 garlic clove, finely chopped
1 tbsp caster sugar
60ml fish sauce
2 tbsp rice vinegar
2 tbsp lime juice

Method

  1. To make the dressing, pound the chillies, garlic and sugar in a mortar and pestle. Add the fish sauce, rice vinegar and 60ml water and stir to dissolve the sugar. Set aside for 15 minutes for the flavours to infuse. Stir in the lime juice, taste and adjust as necessary.
  2. Pull the chicken meat off the bones, tear into bite-sized pieces and add it to a large bowl. Cut the prawns in half lengthways and add them to the bowl.
  3. Add the carrot, cabbage, onion, herbs, fried shallots and peanuts to the bowl. Pour over the dressing, mix well and transfer to a salad bowl. Serve immediately with the extra fried shallots and peanuts.

Lara Dunson’s Burmese Coconut Rice

Serves: 4

Lara Dunston is a Cambodian food and travel writer: she also makes a solid coconut rice, something Nat whipped up to accompany a great Burmese Chicken Curry we had last weekend.

Nothing says you’ve made an effort than a rice that has colour, or additional elements, or both.

This is one such rice, perfect for any Southern Asian curry.

Ingredients

3 c jasmine rice
1 c coconut milk
2 tbsp vegetable oil
3 shallots, finely chopped
1 tsp salt
1/2 tsp turmeric
4 cloves
2 cinnamon sticks
4 bay leaves

Method

  1. Rinse the rice until the water runs clear then transfer to the rice cooker. (We cooked in the microwave).
  2. Pour coconut milk into the rice cooker and then water until it reaches the 3 cup measure.
  3. Add vegetable oil, shallots, salt, spices and bay leaves and combine well.
  4. Cook until the rice is cooked through and then rest for 10 minutes.

Crispy North Indian Style Aloo Tikki with Stuffed Green Peas

Serves: 6-8

Aloo tikki is a popular Indian street food snack made with boiled potatoes, aromatic spices and herbs.

These patties are crispy on the outside and soft and aromatic on the inside. The peas stuffing really adds to the dish though often you find recipes that don’t include the peas.

Do not cut this corner.

They are absolutely moorish and your guests will have smiles all over.

Ingredients

Green peas and potatoes

4 to 5 large potatoes
1/2 c frozen baby peas
2.5 c water

For the stuffing

1/4 tsp red chilli powder or cayenne pepper
1/2 tsp coriander powder (ground coriander)
1/2 tsp fennel powder (ground fennel seeds)
1/2 teaspoon dry mango powder or ¼ to ½ teaspoon lemon juice
2 tsp finely chopped ginger
1 tsp finely chopped green chillies
2 tbsp finely chopped coriander leaves
2 pinches black salt
Salt as required

For the potato mixture

1/2 tsp red chilli powder
1/2 tsp Garam Masala
1 tsp ground coriander
1 tsp dry mango powder or 1 tsp lemon juice
1/2 tsp cumin powder
1/2 tsp black salt
Salt as required
1/4 c bread crumbs or add as required
1/4 c cornstarch (or as required)
2 tbsp chopped coriander leaves
4 to 5 tbsp oil for frying the tikki or as required

Method

  1. Cook the potatoes and the peas: I cooked mine together with the potatoes boiling under a trivet holding the peas in a metal bowl. This got a bit complicated so I would recommend peeling the potatoes and boiling them in a pot until soft.
  2. Steam the peas in the microwave safe dish until soft. About 4 minutes.
  3. Green pea stuffing: Take the peas in a bowl and mash them to a coarse texture.
  4. To the peas, add red chilli powder or cayenne pepper, coriander powder, fennel powder, dry mango powder, finely chopped ginger, green chillies, coriander leaves, black salt and regular salt as per taste.
  5. Potato mixture: Meanwhile drain the water from the potatoes and let them become warm.
  6. When the potatoes are warm, mash or use a ricer. Let mashed potatoes cool completely.
  7. Add chilli powder, Garam Masala, coriander powder, dry mango powder, black salt and regular salt as per taste.
  8. Next add bread crumbs and cornflour and mix very well.
  9. Stuffing and shaping: Divide the mixture into small or medium shaped patties with a hollow center or cup shaped discs. You can apply some oil on your palms when making the patties or tikki.
  10. Place the green peas filling in the center.
  11. Bring the mashed potato edges on the top and seal them.
  12. Frying: Heat 2 tbsp oil on a heavy skillet (preferably cast iron) or frying pan till it is medium hot. Gently place the tikki and begin to pan-fry them
  13. When the base is crispy and golden, gently flip each tikki with a spatula.
  14. Fry the second side till crispy and golden. You can gently flip once or twice more till the aloo tikki are golden and crisp evenly.
  15. Remove and on paper towels. Fry all tikkis this way. Add 2 tbsp more oil when frying the second batch.
  16. Serve with coriander, chutney and yoghurt.
Stuffing the peas into the potato mixture before sealing.

Burmese Lemongrass Chicken Curry

Serves: 2

Last Saturday night, Nat did this curry with a coconut rice.

We wanted something quick, easy and healthy: we were already up to our eyeballs in cooking prepping for Sunday.

Neither of us had high expectations, though wow. It was awesome.

It is the spice that really does it. Hard to put my finger on it, though the heat was so focused and simple. The aromatics from the lemongrass immediately followed.

One mouthful in, Nat said I wouldn’t type it, though two in, I challenged this. Three mouthfuls and we both agreed that it was traditional, wonderful and needed to stick around.

Just make sure you accompany it with the coconut rice.

Ingredients

250gm chicken breast cut into 4cm pieces
3 sticks lemongrass, bruised
2 tbsp vegetable oil
3 shallots, finely chopped
2 tomatoes finely chopped
2 cloves garlic, crushed
1cm ginger, finely chopped
1 1/2 tsp chilli powder
1 1/2 tsp fish sauce
1 1/2 tsp palm sugar
1/2 tsp turmeric

Method

  1. Heat the oil in a large wok and add the shallots and garlic and fry until translucent.
  2. Add half of the tomatoes and cook over a medium-high heat until soft. Add the remaining tomatoes and repeat.
  3. Add the ginger and lemongrass. Stir fry until the sauce becomes a richer, deeper red colour. Then add the chilli powder, turmeric, fish sauce and palm sugar and stir.
  4. Add the chicken pieces with 1 1/2 c water and mix. Bring to a boil and cook for 5 minutes, The cover and simmer on a medium heat for 10 minutes. Finish the curry by removing the lid and allowing the sauce to cook down and thicken (approximately another 15 minutes).
  5. Remove the lemongrass pieces and serve with steamed rice.
